A Few Words About Barbecue
Slow-cooking techniques have been around for centuries. Ember roasting was one of the earliest methods of large scale cooking in the Near East and is still widely practiced. The technique later became popular in Europe, and was brought to the Americas with settlements in Florida and in the Southwest. The term "barbecue," some suggest, comes from the Spanish word "barbacoa," the name for a raised platform used for cooking. Others believe the word originates with the French settlers in Florida, who roasted native goats barbe en queue - from beard to tail.
The flavor, of course, makes all the difference, and Suzanna's Kitchen delivers a tangy, barbecue taste that's classic by any definition.
